Recipe Rave Review: Pumpkin Spice M&M Cookies
I love fall for two reasons: the cooler weather and all that it brings for a change in wardrobe as well as pumpkin spice EVERYTHING. When I saw the M&M's I knew that I needed to make cookies, stat! So, I grabbed my Joy of Cooking and went for a standard drop cookie recipe with a few added secrets from my non-bio sister (the baking princess) KK.
- 1 cup (1/2 lb) butter
- 1 cup brown sugar
- 1 egg
- 1 egg white
- 3/4 cup granulated sugar
- 2 tbsp. vanilla
- 3 cups flour
- 3/4 tsp salt
- 3/4 tsp baking soda
- 2 cups pumpkin spice m&ms
With the ingredients prepped, it is time to grab your handy mixer and cream that butter.
Next up, gradually beat in the sugar.
With the sugar mixed in, add the egg, egg white, vanilla and mix again.
After you have a nice mixture, stir in the flour, salt and soda.
Once you have your dough mixed up, it is time to add the M&M's. I went a bit heavy because I wanted them in every bite, but that is entirely up to you.
Stir them in so they are well dispersed and you are ready to get them in the oven!
Taking a spoon (or teaspoon if you want to be exact) drop the cookies on a greased cookie sheet and put in the oven for 10-15 minutes
Once the cookies are golden brown, take them out of the oven to cool. Or if you are me, try one immediately and burn your mouth.
Nothing better than a pumpkin spice take on a classic cookie. The extra vanilla (special trick from KK) makes the cookies not only buttery but also vanilla-ey delicious! What are your favorite cookie recipes?
