Layered Dip


I think I have made it abundantly clear that I love Mexican food; it is just in my "latina" blood.  When my staff and I were set to attend the Special Games at Cal State Fullerton with our students,  I decided I needed to bring a snack.  I mean, I was pregnant after all and therefore needed to nourish my "Littles" with healthy snacks throughout the day.  I wanted something that could be enjoyed cold and  shared by all.  Then it came to me..duh...a layered dip!! It allowed me to indulge in my love of Mexican food while taking minutes throw together. I was aiming for seven layers, but the more I thought about it, I decided I didn't want those kind of parameters set on myself or my recipe.  I was just going to go for it!

I gathered the ingredients I had on hand and made a plan for my dip-vision.  So far, I was ready to go with refried beans, cheese, sour cream, sugar plum tomatoes, avocado and salsa.  I was off to a good start.  But I felt like there was still something missing...I wanted something more hearty, something with a little more "uummmfffhh" to it...hhmmmmm...I know, I'll add a layer of quinoa on top of the beans!  I did a little jump/squeal in the kitchen and laid out my supplies.


With everything ready to go, I washed my hand sand got started. First up, I grabbed my light yellow Pyrex and prepared to spread.  Beans were the first to go in.


I then added a layer of cooked quinoa that I had mixed up with salsa to give it some added flavor and a burst of flavorful heat.


Next up came the light layer of sour cream.


Sliced tomatoes added some great color as did the delicious avocado.



I sprinkled some cheese on top of this gorgeous creation and BOOM! I was done!


I covered in foil, packed my multi grain tortilla chips and was ready to share my cool, hearty and protein packed snack with staff.  The next day, I was pleased to see it was quite a hit as everyone asked, "What's in this? Is this QUINOA?  Brilliant!"  Well, thank you, thank you very much indeed!

This dip took about five minutes to throw together and required no real cooking (aside from the quinoa of course, but if you are like me you always have cooked quinoa in the fridge).  It was a perfect no-fuss treat to bring and share with others.  With summer drawing near, I thought to myself that this would be the perfect addition to any BBQ or pool party.  I was surely going to use it again!
