Crock Pot Momma: Soup's On! French Onion



With so many things to love (Crock Pots, onions, cheese) I was flabbergasted at the fact I had yet to whip up one of my favorite soups, French Onion.  I decided the time was now and made a plan to indulge in this delicious oowey gooey treat.

 

The ingredients called for:
  • 1/4 c. butter
  • 2 red onions, thinly sliced
  • 2 yellow onions, thinly sliced
  • 1/2 tsp. salt and pepper
  • 1 tbs. sugar
  • 1/4 c. white wine
  • 2 2/3 c. veggie broth
  • 2 c. water
  • 1/4 tsp dried thyme
  • 8-10 slices of french bread
  • 3 cups Swiss cheese
First up, I had to get those onions nice and cooked.  In a skillet I melted the butter then added then onions and sauteed until they were nice and tender.


After the butter had softened, I stirred in the sugar, salt and pepper and cooked for an additional 20 minutes, making sure to stir periodically.


Once those onions were about to get shoveled into my mouth, I quickly moved them into the Crock Pot and added the wine, broth, water and thyme.


I gave everything a quick stir and covered my slow cooker, setting it on high for 3-4 hours (if you are going to be at work and want to do low for 6-8, that works too).

Once the soup had blended its scrumptious flavors it was time to put it in bowls and get bread-y and chees-ey! (My favorite part by far)  I scooped the soup into oven safe bowls and topped with sliced french bread and a slice of Swiss cheese (in retrospect, shredded probably would have been a better choice).


I placed my soups into the oven with the broiler on, and watched the magic melting happen...in minutes!


I scooped a bit more soup on my bread/cheese layer for good measure and sat down to enjoy.  BOY OH BOY, am I glad I finally made this classic!
