Soup's On! Chunky Broccoli Cheddar
I had been really wanting a broccoli cheddar soup, so what is any soup loving TW to do? Get her ingredients and get cooking! The recipe called for:
- 1/4 cup wheat flour
- 2 tbsp. olive oil
- 4 cups vegetable broth
- 1 lb. frozen broccoli (organic)
- 3 cups shredded cheese
- 1 clove garlic
- Salt and Pepper to taste
First things first, heat up the oil in a skillet, but watch it so it doesn't smoke. Once it has been on the heat for a minute or two, whisk in the flour slowly until it starts to bubble. Then slowly whisk in the broth and remove from the heat.
Once you have your broth ready to go, toss it in the Crock Pot and make sure your broccoli is slightly thawed as well as good and chopped. Once you have finished chopping, toss the broccoli in with the broth.
Add the garlic, then salt and pepper to taste. Cook on low for 4-6 hours, or until the broccoli is cooked.
4-6 hours later comes the best part...adding the cheese! I used my favorite sharp cheddar because I love me some good cheese. Stir it in one cup at a time and allow it to melt completely before adding more.
Once the cheese has melted, ladle into a bowl and serve! If you are me you will take just a pinch more of cheese and add it to the top...it is garnish of course!
