Blue & Green(s) Pasta Sauce

Sometimes I just want a big ole' plate of pasta and cream sauce.  I never indulge in this regularly, so when I do decide to break down to temptation, I don't beat myself up over it.  Especially when I am making the cream sauce myself and adding it to sauteed power greens and whole wheat noodles!

What you need for this recipe:
  • Whole wheat noodles (as many or few as you like, I usually just dump them in)
  • 2 cups of regular or light cream
  • 1 cup of blue cheese crumbles (or more if you want it more blue-ey)
  • 5 cups power greens (or spinach, broccoli, zucchini...really whatever you like). 

Before I made my sauce I boiled my noodles and sautéed 5 cups of power greens in a tablespoon of olive oil.  I set both aside for later and got down to business with my cream sauce.  First, I put two cups of cream in a pan over medium-high heat.  I kept a close eye on it and stirred it often, I didn't want that little baby to burn.

Once the cream started to bubble, it was time to keep stirring and add in the blue cheese chunks.

I tossed in my one cup of cheese chunks and stirred like a mad woman to make sure it evenly distributed throughout the whole pan.

Once good and mixed, I gave it a taste.  So far, so great!  I added in my greens and continued to mix them right in.

With my sauce complete, I made a nice little bed of noodles and topped it off with my Blue/green sauce.

I had already whipped together a quick salad and was ready to indulge myself as well as my TH in some down home Italian style cooking!  So creamy and delicious!! With the large amount of noodles I made, I was able to add them to the sauce and mix them in to have some ready to go left overs for the next day.  Now that is what I am talking about!
