Recipe Rave Review: Miso Noodle & Gyoza Quinoa Lettuce Wraps with Peanut Sauce

Feeling a little frisky one night, I decided to try out a new recipe.  Granted, I didn't find it in a book or magazine, I just whipped it up in my head and went for it.  A new Asian fare was on my mind: Miso noodle and Gyoza quinoa lettuce wraps...with my favorite, peanut sauce.

What you'll need:


  • 3 cups frozen (organic) vegetables (defrosted)
  • 2 packages (organic) udon noodles
  • 1 packet instant miso soup
  • 2 cups cooked (organic) quinoa
  • 2 tablespoons Gyoza (or any other asian-fare-ish)sauce
  • 1 package (organic) butter lettuce


I got the miso soup going in a large pot and then threw in veggies.  After about five minutes, I added the udon noodles and turned down the heat and let it simmer on low.







While the miso flavor infiltrated into the veggies and noodles, I took my precooked, organic quinoa, added the gyoza dipping sauce and gave it a good stir.


After ten minutes on the heat, I took off the noodle/veggie combo and let it cool.  Next up, the peanut sauce.


 Peanut Sauce:


  • 5 tablespoons peanut butter
  • 3 tablespoons warm water
  • 2 1/2 tablespoons rice vinegar
  • 1 1/2 tablespoons dark soy sauce
  • 3 teaspoons white granulated sugar


Whisk together all the ingredients in a bowl. Store in the refrigerator until ready to use.





Since I was planning to serve the dinner cold, I set the cooled veggies and noodles in the fridge for a bit along with the quinoa and peanut sauce.  I prepped some organic edamame for a little side dish and got busy doing stuff around the house.  Just an hour later, we were ready to assemble these lettuce wraps and eat!



The dinner was great and took nearly no time at all!  I love a good lettuce wrap and no my TH did too!
