Recipe Rave Review: Lemon Bar Pudding

When my Thriving Mother was visiting to help me with Nest-A-Palooza, she too was in the process of moving.  Which meant even more treasures for me...including her pantry.  Since we both are HUGE lemon fans, she decided to show me a little recipe she found on Pinterest for 2-ingredient Lemon Bars.

She had brought all the ingredients to So Cal and was ready to unload them on me...after she threw them together for a lemony treat, oh yeah!

She simply used:
1 box Angel Food Cake
1 can Lemon Filling

She mixed together the angel food cake mix with the lemon filling, dumped it into my greased vintage 9x13 Pyrex and tossed it in the oven.  It took merely seconds!

She baked it for 20 minutes at 350 degrees then sprinkled powdered sugar on top and it was DONE!  We let it sit a bit in hopes it would become more solid, but we did notice the corners had turned a lovely sponge-like consistency.

Nearly 10 minutes later when we started to cut into it, we noticed only the edges were good and formed, which left the inner sanctum gooey and blessing in disguise for me, I love pudding! Once I plated it, my mouth began to salivate as I tried my first bite.  Now, if you like your lemon treats a bit sweeter then this is the recipe for you.  I prefer mine to be tarrrrrrt, so what is a lemon lover to do?  Toss it aside? Heck no! Dollop some tart lemon curd on that bad boy and eat away.  So, that is exactly what I did!
