Recipe Rave Review: Shroomin' Zucchini Blue Soft Tacos

I love tacos - well any food that is considered "Mexican" really.  Bean tacos can get a bit boring, so I like to fatten mine up with an assortment of veggies.  So, you can imagine my excitement when I stocked up on organic mushrooms and zucchini at TJ's.  Not to mention, my favorite organic blue corn tortillas!

To start this delish dinner,  I first sauteed some onions as I am a grilled onion lover through and through.

Once those were nice and browned I started the mushrooms and zucchini.  I tossed them in that oniony skillet with some seasoning and hot sauce and let them cook right up.

It only took minutes and I found my mouth watering as I prepped the tortillas.  I used my little tortilla heater, got those blue cuties a little brown and then plated them to await their veggie toppings.

When the veggies had reached their finish line, I scooped them up and dumped them in.  I went back and forth on adding refried beans, but decided against it (still not sure why, I don't usually do that).  Regardless of the tacos being bean-less they were still totally delish!  One more vegan feel good meal that is quick, easy and oh so good!
