I love having a handful of "go-to" meals that are easy to customize depending on who you are serving. TH happens to love "picnic" salads, and while I usually make potato salad for him, the other day I decided to try my hand at Macaroni Salad instead. Even though the weather is cooling down, I found this recipe and decided to try it because of all the ways I could make it my own. For instance, it would be easy to turn this vegan by using Vegenaise and nixing the hard boiled egg, or gluten free by using GF pasta. I also like that I can just use whatever vegetables I happen to like or have on hand.
On this particular day, I had some red bell pepper and cucumber that added some fantastic crunch. I like to seed and lightly peel the cucumber, to make it super crunchy instead of mushy.
It's also really important to rinse and cool off the pasta after it's cooked. If you don't, the pasta will continue to cook and become mushy!
I have a foolproof way to cook hard boiled eggs to perfection: place eggs in a small pot, cover with cold water and bring to a soft boil. As soon as it boils (try not to walk away and forget about it!) turn off the heat and cover, let sit for 10-15 minutes. Then run under cool water until you can handle them, and you are ready to peel!
