Trick or TREAT

With Halloween just days away I wanted to find a NON candy treat to give to friends and co-workers. Since I have done candy apple bites in the past, I wanted something new. Something easy, quick and colorful; Halloween colors that is. I GOT IT!! Hand dipped dark chocolate dried apricots, done and done!

Off to the store for supplies. First stop, whole foods for organic dried apricots. Next, on to Trader Joe’s to get my favorite dark chocolate (Be advised, I did force myself to enjoy dark chocolate over milk to get more nutrients and not feel so bad about woofing down a square... or four). Once I had my supplies I got all ready to melt and dip.

Since I make peppermint bark each year for Holiday Handouts, I am no stranger to melting. I am not real fancy so I don’t have one of those double boil melter things (note from Nic: a double boiler is easy to make if you have a small pot and a glass or metal bowl - just add an inch of water in the pot, top with the bowl, and add your chocolate to melt), I just use the good ole’ microwave. I took three squares, placed in a small glass bowl and heated for 30 seconds. Take out and stir, another 30 seconds. Take out and stir. When it was fully melted, I took three more squares and you guessed it heated for 30 seconds. You won’t believe what I did next, yup... stirred. You get how to do it? Pretty simple. Once I was all melted and ready to dip, I grabbed an apricot and dipped it half way into the chocolate. I then placed the gooey colorful treat on my wax paper covered cutting board to keep it from losing ANY of that yummy chocolate.

I dipped and placed until I was all out of apricots and then popped them in the fridge to harden right up.

The next day I was left with the most beautiful quasi-healthy Halloween Treat ever!!

I grabbed some labels, wrapping materials and got to prepping my gifts. Moments later (and I literally mean moments) I was packaged and heading out the door with my treats in hand. There’ll be no trick from this Thriving Wife this year, only a new yummy treat!!

    1. I can vouch for that. Em gave me a bag of these last night and I basically ate the entire thing before leaving her driveway!! They are waaaay better than you'd imagine. The slightly bitter dark chocolate is the perfect compliment to the super sweet dried apricot. YUM!!

  6. Chocolate and apricots are two of my favorite things. Never thought to combine them!! So creative Em. And thanks Nic for the note about how to "make" a double boiler. I'm definitely trying this.
